For the last couple of years, I have been celebrating my Ukrainian heritage with sviata vechera, or "holy supper" on Christmas Eve. The Ukrainian Christmas Eve meal of 12 meatless dishes contains many ancient traditions that actually pre-date Christianity. (Early Christians adopted these customs for themselves investing them with new religious significance.) One of these traditions is having as the centerpiece, a Christmas bread or kolach, consisting of three stacked rings.

Once again, this year I baked my own kolach. What follows is the play-by-play recipe for any who wish to do the same.

Kolach (Christmas Bread) - makes 3 loaves

4 cup milk, scalded
4 eggs
4 tsp yeast
2 tsp sugar
1/2 cup lukewarm water
1 cup oil
1/4 cup sugar
pinch salt
~10 cups flour

		Scald the milk and let cool.
		Mix yeast with the 2 tsp sugar and dissolve in the warm water and let stand 10 minutes till foamy.
		Add remaining ingredients and the flour to make a dough. Kneed until smooth and elastic. Dough should be slightly stiff and just sticky.
		Cover and let rise until doubled. Punch down and let rise again.
		Divide into three. Take one piece and divide into 6. Roll 2 pieces to 30" and twist together. Place in a circle around the outside of a greased 9" pan. Make two more twists 24" long and twist them together in the opposite direction making a double twist. Form in a circle and place on top of the first circle
		Let rise until doubled. Here I made the other two into square loaves. Alternately, make a 8" and 10" round load with them, if you want to stack all three in the traditional way.
		Brush with an egg wash and bake at 350° for 50min-1hour (until it sounds hollow when tapped)
