For the last couple of years, I have been celebrating my Ukrainian heritage with
sviata vechera, or "holy supper" on Christmas Eve. The Ukrainian Christmas Eve meal of 12 meatless dishes contains many ancient traditions that actually pre-date Christianity. (Early Christians adopted these customs for themselves investing them with new religious significance.) One of these traditions is having as the centerpiece, a Christmas bread or
kolach, consisting of three stacked rings.
Once again, this year I baked my own kolach. What follows is the play-by-play recipe for any who wish to do the same.
